Street Taco Night


I often get accused of regularly indulging in difficult to prepare meals, but that is just not true. And to prove that I make and eat regular ol' stuff most nights, I'm gonna show you my easy peasy recipe for street tacos -- which we had for dinner tonight.

To make Casa de Venable's Street Tacos, you will need:

1 lb. - Chopped Cooked Chicken Breast - preferably grilled
1 c. - Fresh Chunky Salsa. (If you don't have a special recipe, just buy a mix like Concord Foods Salsa mix and prepare according to directions)
1 pkg. - Soft Corn Tortilla Shells (NOT FLOUR!!!)
1 pkg. - Taco Seasoning
2/3 c. - Water
1 can - Mild Rotel Diced Tomatoes (use the regular type if you want to add spice)
16 oz. - Monterey Jack Cheese, grated
1 or 2 - Fresh Limes

To save time, you should grill or roast your chicken and create your fresh salsa as much as one day before you plan to have this meal.  Here's what my fresh salsa looks like.  For tacos, it's best to dice the tomatoes and onion into very small pieces.



PREPARING STREET TACOS

Place chopped chicken, taco seasoning, water, and Rotel tomatoes in a deep frying pan or dutch oven. Heat on high until mixture comes to a boil. Reduce heat and simmer on a low heat for about 15 minutes.



When chicken is ready, place corn tortillas in a single layer on a microwave safe plate. Heat about 1 1/2 minutes, until warm, steamy, and pliable. Repeat as often as needed to feed your crowd.



Stack TWO shells atop each other. Add chicken mixture in center. Top with cheese, fresh salsa and a spritz of lime. Fold and eat!  (***Do not skimp on the lime. It makes it taste just right.)


You can garnish with sour cream, cilantro, lettuce or any other desired taco condiment you like, but for traditional street tacos, you need only the chicken, cheese, salsa and lime. Serve with your favorite Tex-Mex sides.
